Google has celebrated the 133rd anniversary of the birth of Michiyo Tsujimura, a Japanese teacher and chemist of his research focusing on the components of green tea, Doodle. Tsujimura was the first woman in Japan to receive a doctorate in agriculture. Thanks to Tsujimura and his basic research into the nutritional benefits of green tea, science today has the answer to why green tea tastes so sour when soaked for too long.

Tsujimura was born on this day in 1888 in Okegawa, Saitama Prefecture, Japan. He spent his first career teaching science. In 1920, he pursued his dream of becoming a scientific researcher at Hokkaido Imperial University where he began analyzing the nutritional properties of Japanese worms.

A few years later, Tsujimura moved to Tokyo Imperial University and began researching the chemistry of green tea alongside Drs. Metro Suzuki, who was famous for her vitamin B1 supplement. Their joint study revealed that green tea contained high levels of vitamin C – the first of many chemical compounds in green tea that were expected under a microscope. The following year she split the tannin, which is a very bitter mixture. These findings form the basis of her doctoral dissertation, “On the Chemical Components of Green Tea” when she graduated as Japan’s first female agricultural doctor in 1932.

In addition to her research, Dr. Tsujimura also made history as a teacher when she became the first Dean of the Faculty of Local Economics at Tokyo Women’s Higher Normal School in 1950. Today, a monument to Dr. Tsujimura’s success can be found. at his hometown of Okegawa more .
